Why is the digital signature in the res.users model removed in Odoo19. It was there in Odoo18 and very useful but the same feature is not available in Odoo19.
Or is there some settings I need to enable?

The signature field is NOT removed in Odoo 19 - it still exists in the res.users model.
Location: Settings → Users & Companies → Users → [Select User] → Preferences Tab → Email Signature

Yes, the digital signature field has been removed from res.users in Odoo 19.
In Odoo 18, users could add their digital signature in User Preferences through the Sign app integration. This
field (sign_signature) is no longer available in Odoo 19's user preferences.
Instead, Odoo 19 centralized signature management under Accounting → Configuration → Signatories, separating document signatures from user-level settings. User Preferences now only shows the email signature field (text footer), not the digital signature binary field.
This architectural change moved signature control from individual users to centralized company-level management.
