How can I configure Product Reviews on my website?

I activated the reviews on my product pages, but is there a way to personnalise it?

I'd like to:

- Send an email to my customers one week after their purchase, asking them to leave a review on the product.

- Have a default 5 stars instead of 4 stars when someone wants to leave a review.

- Be able to rename the meaning of the stars (the text which appears when hovering a star).

Nice to have: 

- Autogenerate a discount code and send it to my customer if he leaves a review on my website.

- Allow my customers to select one or several categories that shows what this customer liked about the product (ie. price, quick delivery, quality etc...)
