I need to edit the phyton code for some changes that i have to do for OpenERP but my information is in a cloud server, how can i access to my server and how can I edit the phyton code without affecting my OpenERP data.

You would need to get command line interface to the cloud server. The service provider is the only one that can tell you how to do that.
Most cloud / Software as a Service providers do not allow command line interface access.
