On Odoo website, it seems like the only way to collect user contact info is through a contact form, which I can only send to an email address, or through the "newsletter" block/popup which will add the user's email address to the mailing list. How can I collect more information (name, postal code) from the user and add to a mailing list automatically?

Could you already solve this problem? One of our clients is working in Odoo 15 and also wants to ask the name of the person making inscription for a newsletter.
So, they are having the same problem as you are mentioning.
