seller: Is it possible to set the user that is currently logged in there
salesteam: by default this is blanc, and so i always have to select a salesteam. can this be changed to default sales team?

you can set defaults for any field - lick on your user name (top right corner) and from the menu select About odoo then activate developer mode.
it used to be very user firendly and for some reason they decided to make it very difficult to find & use.
