Seems that this feature is no more available
On a product category we can either select Manual or Automatic
Anybody knows the reason for removing it ?

Periodic Inventory Valuation was just renamed to Manual - all the same functionality exists.
Are you sure ? before we had Manual, Periodic and Automatic
There were never three options. https://github.com/odoo/odoo/issues/11038 Manual == Periodic

you are right , I got somehow confused
in V10 we had two choices
1- periodic(manual)
2- perpetual (automated)
in V12 it is much clearer
1-manual
2-automatic
