I want to issue different type of bills depending on the type of customer (company, or a physical person). Sometimes customers don't want to see any VAT (taxes) component on their bills.

Hello,
I assume you are using the Odoo standard.
It's not possible to design different templates in Odoo Online for the invoices. You have to use odoo.sh or on-premise and you can customize the templates as you like.
