If you want to use UML to document your work on OpenERP you might want to look at DÃa
OpenERP module code generation from DÃa
It works on Windows, Mac & Linux. It's also available free through the Ubuntu Software Center or here : dia-installer.de
I doubt if anyone will ever document OpenERP with UML diagrams - - it moves too fast for that.
