I want to create a report in Odoo Helpdesk where I can see the time spent between in progress stage to solved stage.

You can create 2 datetime (progress_date, solved_date) fields for that. Create a compute field "Time Consumed" which will calculate the difference between these 2 fields.
Now we have field named Status time(duration_tracking) on project.task model. You can use that for this purpose.
