I do not have much idea on how the process in sales and what functions should I change in sales.order.line? Because I will just add an additional discount field beside the baseline discount field.
If I make a mistake, it will change the flow of the accounting and this could be messy.
I just want to deduct the price_unit of every single product written before going to subtotal in the sales order.

You must enable it.
Settings > Configuration > Sales > Quotation & Sales > Product Features > Allow setting a discount on the sales order lines
Check that box
Hi,
You don't need to add development to fufill that since odoo has is already.
you only need to activate it.
Go to :Settings => General Setitngs => Sale => enable Discounts.
In lines, you will notice a new column called discounts. (by product)
