In Odoo V12, when creating a Manufacturing Order, Odoo would only let the user select a product that had a BOM of the "Manufactured Product" type.
In Odoo V15, when creating a manufacturing order, Odoo will let you select products of all BOM types.
How can I hide products with Kit type BOMs from being displayed when creating a manufacturing order?

I would think this is virtually not possible, as a product can have multiple active boms, some with 'kit' settings and some with 'manufacture' settings.
Only possibility would be to create a filter that leaves out any product with a BOM of type 'kit'. However, if a product also has a 'manufacture' bom, the product will still be ignored.
