The export function is named export_data. You can find the original function from Odoo itself at https://github.com/odoo/odoo/blob/10.0/odoo/models.py#L825-L837. If you inherit it with a super you can add your own logic to it. Your code should look something like this:

@api.multi
def your_export_function(self):
    export_data = super(yourclass, self).export_data(self)
    # your own logic here
    return export_data
