You are posting about the Price Difference Account on the product category. That is not the same as the inventory variation account

A practical scenario in Odoo 19 is when you buy a product at a price different from its standard or expected cost.
Example:
Standard cost of a product = $100 (recorded in expense account)
Vendor invoice price = $110
When you validate the invoice:
$100 goes to the expense account
$10 difference goes to the variation account
This way, Odoo tracks both the planned expense and the cost difference, keeping your accounting accurate.
This also applies in manufacturing or stock valuation when actual costs differ from standard costs.

The variation account is new in Odoo 19 - what you are posting about is the Price Difference Account on the Product Category - the screenshot is of the Inventory Account.
