Odoo 9 | custom Theme

Hi Community,
im new with Odoo and i have some questions about building my own Theme.
Before i build a basic Theme like in the tutorial discribed.
My questions:
1. How can i overwrite the logo-template?
2. How can in overwrite or clear the assets (CSS/less/Js) to set my own css/less/js?
I dount want just to add some styles.
3. What did i have to do to overwirte existing "snippets" (HTML and options)?
4. Where can i find a list of all existing FE-Templates, which are overwriteable?

Thx for the links.

The secound tutorial describes how to add new styles to the backend, but not how to *replace* the default odoo-files in front-end.
Im able to add styles, but i dount know how to replace the default bootstrap-files bei my own bootstrap-files.
maybe you can help me another time?

General answer to "overwrite" theme related objects: the term of choice in Odoo is "inheritance". Please make yourself familiar with this concept.
