like to find out how to change the caption of "taxes" to "vat" or "GST" at the bottom of the sales invoices.

Enable the developer mode and go to Accounting->Configuration->Tax Groups and change the "name" from tax groups as you want. As Odoo groups the taxes in the total of the SO/Invoices, this will be the displayed "names".
