To achieve the workflow where you scan the products you pick up and have Odoo remove them from stock and associate them with your sales order, you can follow these steps in Odoo:

1. Configure Serial Number Scanning: Make sure your system is set up to handle barcode scanning. You should have a barcode scanner connected to your device, and it should be configured to work with Odoo.
2. Enable Warehouse Management App: Ensure that you have the Warehouse Management app installed and activated in your Odoo instance. This app provides advanced inventory management features.
3. Configure Sales Order Picking Type: Go to Configuration > Warehouse > Picking Types. Edit the picking type associated with sales orders (usually "Delivery Orders" or similar). Ensure that the option "Use Existing Lots/Serial Numbers" is enabled.
4. Start Picking Process: When you're ready to fulfill a sales order, create a delivery order from the sales order. In the delivery order, you'll see the list of products to be delivered.

i m in the same boat. Odoo 17 does not allow user to pick the quantities by scanning the product unlike Odoo 14. I am not sure how to configure the odoo 17 to work like Odoo 14 during the picking operation. There is no screen to scan the barcode, system starts to pick the qty one by one. I made a mistake by upgrading from 14 to 17 and now I am missing one of the key critical operations in Odoo 17. 

One of the ways to achieve this would be not to make a reservation. 

On the delivery oder operation, choose the reservation to be manual.

This might affects your current forecasting and reordering processes so would recommend to test before making any changes
