You can create multiple shop in your system.
You can have multiple shop in single warehouse or multiple shop and multiple warehouse to track shop wise stock management.

Now assign pricelist to that shop.
Assign shop to point_of_sale.
Assign point_of_sale to user.

And give access of point_of_sale to users.

So by this way you will have multiple shop with different products.
And when you login with different users, different shop will be accessible.
