I see there are ways to have alternative work centers. However, is there an out-of-the-box Odoo option for being able to select alternative products for use when executing a MO with a BOM? For example, you're out of the main product listed on the BOM, but there is an alternative available.

If you unlock the manufacturing order, you can add a new product and set the quantity of the one you replace by 0.
I believe that the question was more related to a similar functionality to "alternative products" in sales. One of our clients is facing a similar issue, they may have for xample "Bolt A" and "Bolt B", they can both be used in the manufacturing process for the same end product, so basically they are subtitutes. Sometimes you run out of "Bolt A", but from the BOM you should be able to know that you can use also "Bolt B" which happens to be in stock.
As far as I am aware there is no such functionality in Odoo standard ( checked on v16 ) and I believe this could be a nice feature needed by many companies who use MRP @Fabien.
