I have connected out email with Exchange Online following the article about connecting Microsoft Outlook 365 to ODOO with Azure OAuth with Odoo 17.0

But when I connect successfully, I do not get any email retrieved.  The logs indicate that the connection was successful with 0 messages sent/received.   There are many email in the inbox of the account I am connecting to.

Any suggestions on what the problem could be?

How can we add anything to the header when the incoming emails are from outside the organization (the public)?

I don't think you can!
But Maybe you can add manually a mail in Odoo with the outlook plugin (I never used this plugin):

Hello Jeff,
I think your email should not be marked as read when Odoo looks the mailbox and the email must have in his header the variable "X-Odoo-Objects" which allow Odoo to associate the email to an Odoo record. 

Without these conditions odoo doesn't import the email.
