I'm new to odoo and trying to make a signup for Internal user instead of portal user. Does any one have done it before?

Hello riz khan,
If you want to create internal user in signup time, then select user account template from settings.
Go to Settings >> General Settings. In that select Free sign up option for customer account in Users section. And click default access right. In that you can select user type as Internal user.
Make sure all this stuff you have to do in debug mode, otherwise you can see advanced options.

Yes. you can change any user type. if you open user form, in that you can set user type.
So after signup, you can open that user form and change type from portal to internal user
