Hello 


I need my work flow to be as such 


Sales order, check the current stock of the product sold, if there is not enough in stock make a order to manufacture for the product necessary, if there is enough product in stock do NOT make any.


I have been reading the documentation, and it seems MTO would be my best option, but is there a way to check the current stock, before it manufacturers

In Odoo 13, by default it works that way.  If there is stock available then no order is created, even if the Route is MTO. 

In earlier versions of Odoo, MTO did not check the stock - and it is possible to change the behaviour in Odoo 13 (see here), but it seems that the new logic is what you need!
