Is it convenient on odoo 13 to edit the columns of components when generating a list of materials to make it match with a bom extracted from a cad software (per say: inventor, solid works) for a business which produces machinery, for example, adding columns of plane, possition, dimensions, weight, etc?

Yes. Odoo offers powerful customization capabilities. You can add custom fields to any model in the system and add custom models, forms, reports, etc. if needed. In your case, you may also want to explore the possibility of using product variants to meet your needs, if that works for you, since it is something that is configurable out of the box.
