The delivery address is not a mandatory field in deliveries, how can I add an address if I erroneously confirm the transfer without an address?

On a Sales Order, the Delivery Address is auto-populated, so I assume you're referring to a manually created Delivery.

If making a manual Delivery, you could make the "Delivery Address" field mandatory via Studio to prevent this problem in the first place. 

Otherwise click "Return" the Delivery and complete the Return. Now Odoo thinks the Product is back in Stock. Then re-create the Delivery with the Delivery Address field defined.

However, in the meantime I found a solution that needs neither studio (solution also for CE) nor return.

Create a server action (image) with the desired ID, add contextual action and execute the action in the desired transfer (the action can be archived in order to prevent ambiguities and can be unarchived/adapted when necessary):
