Hi all,
Whenever a sales order is created, we receive a notification in our mail that states we have been assigned to this order. Is there a way to turn this notification off? I cannot put all notifications through email, as that caused me to miss other things.
Users can turn of notification emails from their preferences. Clicking their name top right > My Profile > Preferences, select the option Notification "Handle in Odoo"
Administrators can also make select this option for users from Settings > User & Companies > Users and edit "Preferences" tab of the users.

I want to suggest you start from the Technical > Emails > Email Templates. Go through the templates to see if you will find the a template for the action that you get the emails for. Disable it then. Should stop the email notifications for that. Activate the Technical menu by Activating Developer Mode under General Settings.
