After downloading the community edition of odoo. And getting the odoo 14 from Github. I found the server file in the community folder and the odoo14 file I got from Github looks the same. so do I need to download from git?

I am not sure I understand you correctly but if your question is -> odoo download from the official website and GitHub are the same?
each day odoo update the build and it's available via website so it's kinda same as Github
