How do I delete a page in website builder while in edit mode?

There is no option to do so from 'Edit Mode' (in case you mean the frontend page builder/editor that allows you to add/change the content of a page).
You can delete page via Website -> Site --> Content -> Pages however:
Alternatively, you can do so via Website -> Site --> This page -> Properties --> Delete Page:
