I know that I can read emails "sent" via staging branches in the Mails tab, but are these emails stored anywhere that I can access?

Yes.
Emails from non-production databases are stored in the ~/Maildir folder and the text-only content can be viewed using the Ubuntu console utility mutt
From the Odoo.sh webshell, just type mutt to use the Utility:
