Kindly advice to me.
we want to upgrade our current old odoo version to either odoo 15 or 16.
What we need is stable version for basic Sales, Purchase, Inventory , Invoice operation plus rich third party apps.

Hi,
Its always good to go for the latest odoo version, ie, as of now 16.0 and as in 3-4 months time the v17 will be released. So if you go for 15.0 in 4 months time, you will be 2 versions behind.
And you can also consider the tool, that you will be using for the migration purpose, if you were using open upgrade oca project, i believe this is not yet ready for 16.0 .
If the tool is ready for 16.0 and used third party apps is available in 16.0, go for migrating to 16.0
