Is there any way to export my orders to an excel sheet?

I would need fields like, phonenumer, price, marge, state of the invoice,...

Have a look on this module https://www.odoo.com/apps/modules/8.0/ir_export_extended_ept/ if it can be useful for you.

Go to tree/list view -> Select the row you want to export -> Go to more option -> Export -> Select the fields you want to export -> Export format (Excel)

and where can i do that regular export?

I have never seen that screen you posted earlier...

You need also to have permission on ir.exports object (don't know what is default group for that, seems like hr.employee)

In list view, select all orders you wish to export by clicking the checkbox.
A box then appears on the top, to the right of the Create/Import button.
Click on More, Export, and then you follow steps described by a previous user answer.

You have to do a regular export, but when you see a form to select fields, just select 'Export all Data' from the dropdown list. See image below:
