I am able to chose to edit document, but I can only chose between a few boring templates.
How do I change / edit the default invoices even more? For instance, I would like to have the customer address field on the left side, as well as editing the footer and other parts.
Where do I go and how do I go there?
Option 1:
From the "Settings" App, click CONFIGURE DOCUMENT LAYOUT:
Choose from one of the available templates and customize as needed. Most fields are HTML so you can change the formatting and include links and pictures.

For this, you have to customize the invoice report layout. If you are an enterprise user and access to the odoo studio, you can try changing the report design using the odoo studio.
If you dont have access to studio, you have to customize the layout using the code.

Thanks Niyas - does that mean that I can do it through developer-state and the Edit form? Or do I need to go as deep with something like PyCharm?
