We are currently trying to redirect one product to another as we have created a new version of the product, so it has a different id. We have deleted the old product, but the redirect doesn't work it still just 404s?

It match the route /shop/, but don't find the product -> 404
In your case, you need to unpublish / archive the old product (if already referenced somewhere in google) instead to delete it. From this way, the redirect will work since odoo fallback on redirect in case of 403.
The product is no longer in the DB and just 404s
