How can I manage it, if  my "Associate 1" had different prices (Cost) between different kind of services?

Use different products with different prices to create tasks from.

There is no direct way to do. But on task timesheet list there is one more field(total) which is auto computed and invisible in list view. you can make it visible and direct change the total hour cost. That will be affect in your analytic account. (this is alternative, not fully tested)
