We have some developments made in Odoo code (some were made as a module and some were not) we did them on Windows server, and they are working perfectly.
Now we are moving the source code to a Linux server, do we have to re-test these developments or not?

All of the custom modules I have developed work the same in Linux and Windows. The only way you could find problems with your modules is if you are changing Odoo versions.
