im trying to export all PDF Files, which are stored in the table ir_attachment to the servers filesystem.
Is there a possibility?

There is one module available for the every document management. It is available in ODOO app for 9 version. Can download from this link.
\https://www.odoo.com/apps/modules/9.0/knowledge/
This module is the base for any knowledge and document management application.
You will find menu knowledge and it will stores PDF reports which are there in attachment.
