While data is "at rest" sitting in PostgreSQL, how is it secured?

Data (other than passwords) stored in place is not encrypted but any database fields can be encrypted via custom development, leveraging well accepted encryption algorithms such as those available in https://cryptography.io/en/latest/fernet/
We recommend this for Customers who need an additional layer of risk mitigation. Odoo and Odoo Partners have the skills to do this.
