Is there a way to delete transactional data in a DB and leave all what was customized ?
e.g Delete account postings, invoices, but leave customer data, supplier data.
If yes, what with the numbering of the postings ?

There is no reasonable way to do this because of the complexity of the relational interdependencies. Use backups to ensure proper states of your databases.
