I am using the manufacturing app in version 18 and wondering if I can customize the printed work order that is generated from the MO. I want to add information that is not currently being shown.

With the Studio app you can modify print layout without coding knowledge. Odoo charge you extra for using the Studio app.
Be aware the customizing with Studio app will give you extra work when you upgrade to new versions.
