What does the ‘Application email’ do?
Allows applicants to communicate with the recruiter with the email address.
Allows applicants to schedule interviews with the email address.
Allows applicants to apply for the job position by emailing their resume to the email address.
This field is where the applicant's email goes on their applicant record, so the company can contact them.

If I want to add a skill that is not already configured, can I add it at the same time as adding pre-existing skills?

What does the ‘Interviewer’ field do?
The person selected can view all applicants and respective documents, join any meetings related to the job position, and refuse candidates, even if they do not have ‘Recruitment’ app access rights.
Changes the selected employee’s record to have ‘Recruitment’ app access rights so they can view all applicants.
Assigns temporary access rights for the designated employee, so they can schedule interviews.
The selected employee can change the configuration of the job position, as well as schedule interviews, and refuse candidates.
