Where is my data stored when using Odoo? Can I access it offline?

Where is my data stored when using Odoo?
- Odoo on premise stores data in a PostgreSQL database - access depends on your Database Administrator - ask them!
- Odoo online (aka SAAS) stores data in a PostgreSQL database - it is protected from access and not available.
Can I access it offline?
- No. You can take a backup and import it into another Odoo server, but there is no other access.
Except for the POS which is accessible in a disconnected mode. You need to be connected to your server when opening and closing your session, but not in between.
