Is there a way to add in store pick up times for the customer to choose from? Would I do this in the shipping methods on the in store pickup? I was wanting it to be a calendar view so the actual dates updated, as I want customers to be able to choose pickup times that are in the future.

A possible way could be to enable extra step at checkout option (setting > website > Shop - Checkout Process section)
Edit the form to add the field 'Delivery Date'. While completing the order customer can provide the date and time, this would update the 'scheduled date' field on the delivery order
