After sending orders to kitchen , want disable or dont want allow any cancellation .. how can do it?

From the configuration just enable lock confirmed orders. Only admin have access to unlock it.

The question seems to suggest that the 'order' being sent to Kitchen probably via kitchen printer.
iI am facing the same problem as yours, I have only a POS module and not a sales module and the function in the first answer (lock confirmed sales does not exist. The question again is how do I prevent the user from deleting the item after sending to the kitchen unless there is a manager authority

Yes, POS orders are not being locked in standard process.
But, if you login as a POS user you'll not allow to change over picking transfer.
