Why does Odoo allow users to modify an email message sent from the Chatter after it has already been sent? Could you explain the reasoning behind this feature and its intended use cases?

Unlikely. After the email is sent, the user only sees the body, the email status (mail icon), and a reaction option (emoji and favourite icon).

If there's an edit option, it could be a note or Activity.
