We want to provide much more simplified view on Odoo app. Is there a way to control which view to use based on the client type (Web Browser / Odoo app)?

Yes we can set view based on user. Make it as Debug Mode ,In User Menu, select any of the user you need to set.Go to Preference page there is a field as Home Action, set which menu he/she can view first after login.
