Hi,
In product template there are actually two checkboxes:
1. can be sold -> will allow you to filter sealable products on SO

2. can be purchased -> will allow to filter products which can be purchased

3. for manufacturing (MO) you can filter products base on category or simply on manufacture route or tags 
Note: manufacture route checkbox is defined on inventory tab in product template

Example for tags:

3.1. add tag name "mn" on manufacturing product

3.2. set domain on Manufacturing order

3.3. try to create MO:

So you want to"prevent adding some products as components in BOMs",
Note: this solution depends on your business and you can reverse the condition also you can make use of tags (in order to not add extra fields)
1. add check box in product template

2.add domain on Bom

3. try to add product "cheese burger" in my example.
