How to manage closing year-end with the clearance of old records in Odoo 11 Community?

Question

I have been using Odoo 11 Community for Fuel Station for the past one year. I have a few customized apps too. I will get around 3000 orders from Point of sale daily. As the days go on, odoo is getting slower. I tried enabling multiprocessing mode and PostgreSQL tunings.
Now, I am looking for ways to close the fiscal year. I wish to start everything new and I don’t want the previous year's data to remain in the new fiscal year so that the database won’t grow larger and larger. But I should have t

IMHO this is quite a weird approach and the necessary efforts to do that is probably much higher than simply buying more hardware. Clearing data from any ERP system is almost impossible, due to the numerous logical interdependencies in the data model. Keeping old backed-up data consistent with a living system is not easy either.
