Go to Projects (select List View) > Select the Project > Project Stages tab (Delete the items you don't need and Add Item.
The correct Stages will then display on the Issues section for that particular Project.
Recommendation: Create a Project Template by clicking Set As Template so that you don't have to do this for each Project.
