Hi,
One possible solution to analyze the history of prices for products that you sell and buy is to use a specialized software tool, such as the Odoo module called "Previous Sale/Purchase Product Rates".
This module enables a view to see all previous sale/purchase product rates of selected customers. It will help you to manage your orders according to these price histories. You can see these options from the sale/purchase form.

This can be done in Studio.
1. Create a new tab
2. Add a One2Many Field and select customer on Sales Order Line
3. Edit the List View and add the price and remove any fields you don't need
Now you can see the sales order lines for this customer:
