Could I have a product with specific and assigned payment method (acquirer)? for example, when it is product A, payment method Wire-Transfer is only allowed. When it is product B, PayPal is only allowed.

I think In Odoo Base actually there no such kind of Functionality. i think You have to do Custom Implementation for that.
