For each of my Chart of Account, I want to group them for better reporting. However, the Group Field is grey out. I cannot create or update from Chart of Account screen or Edit mode of Each GL Account.

Groups must be created first, because part of the creation is setting up the starting and ending prefixes, which determine which groups show up in the drop down.
Since no groups have been created for the prefix range of the account you are looking at, the field is greyed out.
Find Groups in Developer Mode:
This option is missing in Odoo 15.
I have updated my post with a screenshot of the Menu sequence - as I posted you need to activate DEVELOPER MODE to see the Menu (and need the Accounting App installed).
