How to set a default email sender for a direct email from odoo. Settings --> Email-->Emails--> Create.

you can configure a "default" from in each email template in the Tab "Email Configuration"->"From" or define a sender of all emails by adding an email address to the "From filter" of the "outgoing mail server" configured in Odoo.
